In fact, you can add whatever green veg you’ve got in the fridge and it’s likely to enhance the flavour. We love adding peas to this dish for that extra sweetness. Be sure to mix the egg and pecorino quickly once the pasta has been taken off the boil to avoid scrambling the eggs.

Get your greens in the best way possible, and make sure you’re following for more one pot, one portion meals. You need: – 100g linguine (or spaghetti) – 75g broccoli – Handful of spinach leaves – 1 egg – 30g pecorino (plus more to top) – Black pepper – Juice of 1/2 a lemon – Big pinch of chilli (1/2-1tsp) Add you linguine to a pan of boiling water and cook for 7-8 minutes. Meanwhile, in a bowl combine the egg, pecorino and a big pinch of black pepper and whisk together with a fork. Chop your broccoli into small florets and after the 7-8 minutes add it in to your pasta along with the spinach. Cook for 2 more minutes then drain but make sure to reserve some pasta water. Add a splash of this pasta water to the egg mixture and stir. Pop the pasta and greens back in the pan but keep it off the heat and add in the egg mixture. Toss everything together until combined, then you can put the pan back on a medium heat and stir for a couple more minutes until the sauce is glossy and coats the pasta nicely (you can add more pasta water if needed). Finish with the lemon juice and chilli, and season to taste.     Chilli Mac

    Don’t knock this one before you try it. In this recipe by Kristine’s Kitchen, she’s combined two widely loved dishes – chilli and pasta! While it might take a few hours in the slow cooker, it requires minimal prep and can be left to its own devices once it’s cooking. This vegetarian twist on the classic by Slow Cooker Veggie Bolognese uses lentils to provide the rich protein you’d usually get with beef mince.
